This is sooo yummy, gluten-free, and vegan!

Ingredients:
Crust
1 cup walnuts
1 cup shredded coconut (unsweetened)
8 large dates, pitted
Filling
3-4 ripe avocados
¾ cup fresh lime juice
¾ cup honey
½ cup coconut oil
Instructions:
Place walnuts, shredded coconut & pitted dates in a food processor. Run processor until ingredients are finely chopped. The crust ingredients should stick together when squeezed between fingers & thumb. If they don’t stick together, add more dates & process until the new date are well-incorporated.
Press ingredients into a 9 inch pie plate, greased with coconut oil. Set aside. Rinse food processor and chopped avocados. Pulse to chop further. Add honey, lime juice & coconut oil. Run processor until you have creamy mixture. Taste & adjust flavors if necessary. Pour into pie crust and chill in the refrigerator. Serve chilled with fresh berries, coconut cream or whipped cream.
